The article '3.3 Customize your content' describes how you can set up your content. For each category you can also customize the content of the confirmation content and confirmation email.
If you setup and save category, Registration automatically creates a confirmation content and confirmation email content block. (see screenshot below). Click on Edit to customize as you want. If you leave it blank, it will take the default content blocks.
